Ingredients

  • 500 grams small fish (such as anchovies or smelts), cleaned and gutted
  • 150 grams rice flour
  • 50 grams cornstarch
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 piece lemon, cut into wedges
  • 1 liter vegetable oil, for frying
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Rinse the small fish under cold running water and pat them dry with paper towels.

Step 2

In a large bowl, mix together the rice flour, cornstarch, salt, pepper, paprika, and garlic powder.

Step 3

Heat the vegetable oil in a deep frying pan or a deep-fryer over medium-high heat until it reaches 180°C (350°F).

Step 4

Dredge each fish in the flour mixture, ensuring they are well-coated, and shake off any excess.

Step 5

Carefully place the fish in the hot oil in batches, being careful not to overcrowd the pan. Fry each batch for about 3-4 minutes or until the fish are golden brown and crispy.

Step 6

Use a slotted spoon to remove the fish from the oil and place them on a plate lined with paper towels to drain any excess oil.

Step 7

Repeat the process until all the fish are cooked.

Step 8

Serve the crispy fried fish hot, garnished with lemon wedges and chopped parsley if desired.
