Ingredients

  • 14 oz Canned artichoke hearts
  • 1 cup Gluten-free all-purpose flour
  • 0.25 cup Cornstarch
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Paprika
  • 1 cup Soda water
  • 2 cups Vegetable oil
  • 2 tablespoons Fresh parsley (optional)

Directions

Step 1

Drain the canned artichoke hearts and pat them dry with paper towels to remove excess moisture. Cut each artichoke heart in half lengthwise.

Step 2

In a medium bowl, combine the gluten-free all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, dried oregano, and paprika. Mix well.

Step 3

Pour the soda water into the dry ingredients gradually, whisking continuously until the batter is smooth and thick enough to coat the back of a spoon.

Step 4

In a large skillet or heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature. If you don't have a thermometer, test by dropping a small amount of batter into the oil; it should sizzle and float to the surface immediately.

Step 5

Dip each artichoke heart half into the batter, making sure it is fully coated. Let any excess batter drip off before placing it gently into the hot oil.

Step 6

Fry the artichokes in batches, being careful not to overcrowd the pan. Cook them for about 2-3 minutes per side or until they are golden brown and crispy.

Step 7

Use a slotted spoon to remove the artichokes from the oil and transfer them to a plate lined with paper towels to drain off any excess oil.

Step 8

Garnish with freshly chopped parsley before serving, if desired. Serve the crispy fried artichokes immediately to enjoy their maximum crispiness.
