  • 500 grams Fresh anchovies
  • 1 cup Rice flour
  • 0.5 cup Cornstarch
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Lemon zest
  • 1 large Egg
  • 0.5 cup Cold water
  • 500 ml Vegetable oil for frying
  • 1 whole Lemon wedges
  • 2 tablespoons Fresh parsley

Directions

Step 1

Begin by cleaning the anchovies. Remove the heads, guts, and spine to butterfly them. Rinse them under cold water and pat dry with kitchen paper towels.

In a large bowl, combine the rice flour, cornstarch, salt, ground black pepper, smoked paprika, and lemon zest. Mix well.

In a separate bowl, beat the egg and then add cold water to create an egg wash.

Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 180°C (350°F).
