Ingredients

  • 500 g White fish fillets (such as cod or tilapia)
  • 150 g Gluten-free breadcrumbs
  • 2 large Eggs
  • 2 Spring onions, finely chopped
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Lemon zest
  • 50 g Gluten-free all-purpose flour
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 tbsp Olive oil
  • 0 as needed Cooking oil (for frying)

Directions

Step 1

Rinse and pat dry the fish fillets. Place them into a food processor and pulse until they are finely chopped, but not pasty.

Step 2

Transfer the chopped fish into a large mixing bowl. Add the gluten-free breadcrumbs, eggs, spring onions, parsley, lemon zest, salt, and black pepper. Mix until well combined.

Step 3

Divide the mixture into 8 equal portions and shape each portion into a patty about 1-1 ½ cm thick.

Place the gluten-free all-purpose flour on a plate. Dredge each patty lightly in the flour, shaking off any excess.
