  • 1 cup Club soda
  • 1 liter Vegetable oil
  • 3 pieces Lemon wedges

Directions

Step 1

Start by thoroughly rinsing the fresh squid rings under cold water. Pat them dry using paper towels.

In a large mixing bowl, combine the gluten-free all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika.

Slowly pour the club soda into the dry ingredients, whisking continuously until you achieve a smooth batter. It should have the consistency of heavy cream.

Heat the vegetable oil in a deep pot over medium-high heat. The oil should reach around 180°C (350°F). To test, drop a small amount of batter in—it should sizzle and rise to the top.
