Ingredients

  • 1 cup Cornmeal
  • 1 cup Gluten-free all-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1.5 cups Milk (or dairy-free alternative)
  • 2 Eggs
  • 4 tablespoons Unsalted butter, melted (or dairy-free alternative)
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 0.5 cup Fresh corn kernels (optional)
  • 0 Cooking spray or additional melted butter for waffle iron

Directions

Step 1

Preheat your waffle iron according to the manufacturer's instructions.

Step 2

In a large bowl, whisk together the cornmeal, gluten-free all-purpose flour, baking powder, baking soda, and salt.

Step 3

In another bowl, combine the milk, eggs, melted butter, honey, and vanilla extract. Whisk until well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Step 5

If using, gently fold in the fresh corn kernels.

Step 6

Lightly grease the waffle iron with cooking spray or brush with melted butter.

Step 7

Pour enough batter onto the hot waffle iron to cover the grid without overflowing, about 1/4 to 1/3 cup depending on the size of your waffle iron.

Step 8

Close the lid and cook for 3-5 minutes, or until the waffles are golden brown and crispy. Adjust the cooking time based on your waffle iron.

Step 9

Carefully remove the waffle and repeat with the remaining batter.

Step 10

Serve the waffles warm with your choice of toppings such as fresh fruits, syrup, or yogurt.
