Ingredients

  • 8 pieces Chicken legs (drumsticks)
  • 2 cups Buttermilk
  • 1 cup Gluten-free all-purpose flour
  • 1 cup Cornstarch
  • 1 tablespoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Cayenne pepper
  • 1 as needed Cooking oil spray (olive or avocado)
  • 2 tablespoons Fresh parsley (for garnish, optional)

Directions

Step 1

In a large bowl, combine the buttermilk with a pinch of salt and black pepper. Submerge the chicken legs in the buttermilk mixture, cover, and refrigerate for at least 1 hour or overnight for best results.

Step 2

In another large bowl, mix together the gluten-free all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. This will be your coating mix.

Step 3

Preheat the air fryer to 380°F (193°C).

Step 4

Remove the chicken legs from the buttermilk, allowing any excess to drip off. Coat each chicken leg thoroughly in the flour mixture, pressing the mix onto the chicken to ensure an even coating.

Step 5

Lightly spray the air fryer basket with cooking oil spray to prevent sticking.

Step 6

Place the coated chicken legs in the air fryer basket, making sure they don’t touch to allow even air circulation. Depending on the size of your air fryer, you may need to cook them in batches.

Step 7

Lightly spray the tops of the chicken legs with cooking oil spray to assist in browning.

Step 8

Air fry the chicken legs for 25-30 minutes, turning them halfway through, until they are golden brown and crispy. The internal temperature should reach at least 165°F (74°C).

Step 9

Once cooked, carefully remove the chicken from the air fryer and let them rest for a few minutes before serving.

Step 10

Garnish with freshly chopped parsley if desired, and serve hot with your favorite dipping sauce.
