Ingredients

  • 1.5 cups Arborio rice
  • 2 tablespoons Unsalted butter

  • 4 cups Chicken stock (gluten-free)
  • 0.5 cup Dry white wine
  • 1 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

In a medium saucepan, bring the gluten-free chicken stock to a simmer. Keep warm over low heat.

Step 2

In a large skillet or saucepan, heat 1 tablespoon of butter and the olive oil over medium heat.

Add the chopped onion and sauté until soft and translucent, about 5 minutes.
