Ingredients

  • 12 ounces gluten-free penne pasta
  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large garlic cloves
  • 2 tablespoons unsalted butter
  • 1.5 cups heavy cream
  • 1 cup parmesan cheese
  • 2 cups baby spinach
  • 0.5 cup chicken broth
  • 2 tablespoons fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free penne pasta and cook according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, slice the chicken breast into thin strips. Season the chicken with salt and black pepper.
