Ingredients

  • 2 whole Ripe avocados

  • 1 cup Fresh basil leaves

  • 0.25 teaspoon Black pepper
  • 1 cup Cherry tomatoes
  • 0.25 cup Parmesan cheese (or nutritional yeast for vegan)

Directions

Step 1

Cook the gluten-free pasta according to package instructions in a large pot of salted boiling water. Reserve 1 cup of pasta water, then drain the pasta and set aside.

While the pasta is cooking, prepare the avocado sauce. In a food processor, combine the ripe avocados (pitted and peeled), lemon juice, garlic cloves, fresh basil leaves, olive oil, salt, and pepper. Blend until smooth and creamy.
