Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Baking soda
  • 0.5 cup Granulated sugar
  • 1 cup Whole milk
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1 piece Large egg
  • 2.25 teaspoons Active dry yeast
  • 2 tablespoons Warm water
  • 0 for frying Vegetable oil
  • 1.5 cups Powdered sugar
  • 3 tablespoons Hot water
  • 0.5 teaspoon Vanilla extract (for glaze)

Directions

Step 1

In a small bowl, combine the warm water and active dry yeast, stirring gently. Let it sit for about 5 minutes until it becomes frothy.

Step 2

In a medium saucepan over low heat, melt the butter. Once melted, remove from heat and add milk and vanilla extract. Stir until combined and set aside to cool.

Step 3

In a large mixing bowl, whisk together gluten-free all-purpose flour, xanthan gum, baking powder, salt, baking soda, and granulated sugar.

Step 4

Add the egg to the frothy yeast mixture and whisk until combined.

Step 5

Pour the yeast mixture and milk-butter mixture into the dry ingredients. Stir until a smooth dough forms.

Step 6

Cover the bowl with a clean cloth and let it rise in a warm spot for about 1 hour or until doubled in size.

Step 7

Lightly flour a surface with gluten-free flour and turn the dough onto it. Roll out to about 1/2-inch thickness.

Step 8

Using a doughnut cutter, cut out doughnuts and transfer them onto a parchment-lined baking sheet. Let them rise for an additional 30 minutes.

Step 9

Heat vegetable oil in a large pot over medium heat, aiming for a temperature of 350°F (175°C).

Step 10

Fry the doughnuts in batches for about 1-2 minutes per side or until golden brown. Transfer them to a paper towel-lined plate to drain excess oil.

Step 11

For the glaze, mix powdered sugar, hot water, and vanilla extract until smooth in a medium bowl. Adjust thickness with more water or sugar as necessary.

Step 12

Dip the warm doughnuts into the glaze and transfer them to a wire rack to allow excess glaze to drip off and dry slightly.

Step 13

Serve warm and enjoy the melt-in-your-mouth gluten-free doughnuts!
