Ingredients

  • 2 cups Broccoli florets
  • 2 medium Bell peppers (red, yellow, or orange)
  • 2 medium Carrots
  • 1 cup Sugar snap peas
  • 1 cup Baby corn
  • 4 stalks Green onions
  • 3 cloves Garlic cloves
  • 1 inch piece Fresh ginger
  • 0.25 cup Tamari (gluten-free soy sauce)
  • 2 tablespoons Sesame oil
  • 2 tablespoons Olive oil
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and prepare all vegetables. Cut broccoli into bite-sized florets. Thinly slice bell peppers and carrots. Trim ends of sugar snap peas. Slice baby corn diagonally. Chop green onions into 1-inch pieces. Mince garlic cloves. Grate the ginger.

Step 2

In a small bowl, mix together tamari, sesame oil, and cornstarch with water to form a smooth sauce.

Step 3

Heat olive oil in a large wok or frying pan over medium-high heat.

Step 4

Add minced garlic and grated ginger to the pan, and stir-fry for about 30 seconds until fragrant.

Step 5

Add broccoli florets, sliced carrots, and sugar snap peas. Stir-fry for 3–4 minutes until they start to soften.

Step 6

Add sliced bell peppers and baby corn, and continue to stir-fry for another 3–4 minutes until all vegetables are tender-crisp.

Step 7

Pour the prepared tamari sauce over the vegetables. Stir well to coat all the vegetables with the sauce. Allow the sauce to thicken for about 1–2 minutes.

Step 8

Add green onions, and stir them in briefly.

Step 9

Season with salt and black pepper to taste.

Step 10

Remove from heat, sprinkle sesame seeds on top, and serve hot.
