Ingredients

  • 2 large eggs
  • 1.5 teaspoons pure vanilla extract
  • 0.75 cup milk

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Step 2

In a medium bowl, whisk together the gluten-free flour blend, xanthan gum, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, beat the butter and sugar together using an electric mixer on medium speed until light and fluffy, about 3 minutes.

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
