Ingredients

  • 200 grams Gluten-free all-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 115 grams Unsalted butter
  • 150 grams Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 120 milliliters Whole milk

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 20 cm (8 inch) round cake pan with butter or line it with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, xanthan gum, and salt. Set aside.

Step 3

In a large mixing bowl, beat the unsalted butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet mixture, alternating with the whole milk, beginning and ending with the flour mixture. Mix just until the ingredients are combined and a smooth batter forms.
