Ingredients

  • 2 cups Gluten-free all-purpose flour blend
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.75 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 cups Powdered sugar
  • 0.5 cup Unsalted butter, softened (for frosting)
  • 3 tablespoons Heavy cream
  • 1 teaspoon Vanilla extract (for frosting)
  • 1 pinch Salt (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter mixture and beat until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough comes together.

Step 6

Roll tablespoons of dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.

Step 7

Press each ball slightly to flatten it with the bottom of a glass or the palm of your hand.

Step 8

Bake in the preheated oven for 9-11 minutes, or until the edges are just beginning to turn golden.

Step 9

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

To make the buttercream frosting, beat the softened butter in a medium bowl until smooth and creamy.

Step 11

Gradually add the powdered sugar, 1/2 cup at a time, beating on low speed after each addition.

Step 12

Mix in the heavy cream, vanilla extract, and a pinch of salt until the frosting is smooth and fluffy.

Step 13

Once the cookies are completely cooled, spread or pipe the buttercream frosting on top of each cookie.

Step 14

Decorate with sprinkles or colored sugar if desired, and enjoy!
