Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 0.25 cup tamari (gluten-free soy sauce)
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 2 cups broccoli florets
  • 1 carrot, julienned
  • 3 green onions, thinly sliced
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds
  • 4 cups cooked rice (for serving)

Directions

Step 1

Slice the chicken breasts into thin strips and place them in a bowl.

Step 2

Add the tamari and cornstarch to the chicken, mixing well to ensure all the chicken pieces are evenly coated. Let it marinate for 10 minutes.

Step 3

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.

Step 4

Add the chicken to the pan in a single layer. Cook for 4-5 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove from the pan and set aside.

Step 5

In the same pan, add the remaining tablespoon of vegetable oil.

Step 6

Stir in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.

Step 7

Add the red bell pepper, broccoli florets, and julienned carrot to the pan. Stir-fry for 3-4 minutes until the vegetables are just tender-crisp.

Step 8

Return the cooked chicken to the pan, tossing everything together.

Step 9

Add the sliced green onions and drizzle with sesame oil, tossing once more to combine all the flavors.

Step 10

Sprinkle sesame seeds over the stir-fry before serving.

Step 11

Serve the stir-fried chicken with steamed rice.
