Ingredients

  • 2 pounds beef chuck
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups gluten-free beef broth
  • 3 medium carrots, sliced
  • 2 stalks celery stalks, sliced
  • 3 medium potatoes, cut into chunks
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 2 bay leaves
  • 1 tablespoon gluten-free Worcestershire sauce
  • 1 cup frozen peas

Directions

Step 1

Cut the beef chuck into 1-inch cubes. Pat them dry with paper towels.

Step 2

Season the beef cubes with salt and black pepper.

Step 3

In a large Dutch oven, heat olive oil over medium-high heat.

Step 4

Add beef cubes in batches to avoid overcrowding and sear them until browned on all sides. Remove the beef and set aside.

Step 5

In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

Step 6

Return the beef to the pot and add the gluten-free beef broth.

Step 7

Stir in the sliced carrots, celery, and potatoes.

Step 8

Add tomato paste, thyme, bay leaves, and gluten-free Worcestershire sauce.

Step 9

Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for 2 ½ to 3 hours, or until the beef is tender.

Step 10

In the last 10 minutes of cooking, add the frozen peas and continue to cook until they are heated through.

Step 11

Remove bay leaves, taste, and adjust seasoning with salt and pepper if necessary.

Step 12

Serve hot, garnished with fresh herbs if desired.
