  • 4 cups Yellow squash
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 3 tablespoons Butter (unsalted)
  • 1 cup Gluten-free cracker crumbs
  • 2 large Eggs
  • 1 cup Sour cream
  • 1 cup Cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with some butter or non-stick spray.

Step 2

Slice the yellow squash into 1/4-inch thick rounds and chop the onion finely. Mince the garlic cloves.

Step 3

In a large skillet over medium heat, add the olive oil and 1 tablespoon of butter. Once melted, add the squash and onion. Cook for about 10 minutes, stirring occasionally, until the squash is tender and onion is translucent.
