Ingredients

  • 2.5 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 0.5 teaspoon salt
  • 1 cup unsalted butter
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons ground cinnamon
  • 0.25 cup granulated sugar (for coating)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free flour, baking soda, cream of tartar, and salt. Set aside.

Step 3

In a large bowl, beat the butter and 1.5 cups of granulated sugar together with an electric mixer on medium speed until light and fluffy, about 2 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

In a small bowl, combine the remaining 0.25 cup of granulated sugar with the ground cinnamon for the coating.

Step 7

Using a tablespoon or small cookie scoop, portion dough and roll into balls. Roll each ball in the cinnamon-sugar mixture until fully coated.

Step 8

Place the coated dough balls onto the prepared baking sheets, about 2 inches apart.

Step 9

Bake in the preheated oven for 9-10 minutes, or until the edges are set and the centers are slightly soft.

Step 10

Remove from the oven and let cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
