Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 4 pieces gluten-free baguette or hot dog buns
  • 0.5 cup mayonnaise
  • 2 tablespoons lemon juice
  • 0.5 cup celery, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons butter
  • 4 large leaves romaine lettuce leaves

Directions

Step 1

Bring a medium pot of water to a boil. Add the shrimp and cook for about 3 minutes or until the shrimp are pink and opaque.

Drain the shrimp and transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain again and chop the shrimp into bite-sized pieces.
