Ingredients

  • 1 prepared 9-inch crust Gluten-free pie crust
  • 6 slices Bacon
  • 1 cup Gruyère cheese
  • 4 large Eggs
  • 1.5 cups Heavy cream
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.125 teaspoon Nutmeg
  • 2 tablespoons chopped Chives

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the gluten-free pie crust in a 9-inch quiche or pie pan.

Step 3

Blind bake the crust by lining it with parchment paper and filling it with pie weights or dried beans. Bake in the preheated oven for 10 minutes. Remove the weights and parchment, and let the crust cool.

Step 4

Meanwhile, cook the bacon in a skillet over medium heat until crisp. Remove from the skillet and place on a paper towel-lined plate to drain. Once cool, crumble the bacon into small pieces.

Step 5

Grate the Gruyère cheese if not pre-grated.

Step 6

In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.

Step 7

Once the crust has cooled, sprinkle the crumbled bacon evenly over the bottom of the crust.

Step 8

Sprinkle the Gruyère cheese on top of the bacon.

Step 9

Pour the egg mixture over the bacon and cheese in the crust.

Step 10

Place the quiche in the oven and bake for 25-30 minutes or until the filling is set and lightly golden brown on top.

Step 11

Let the quiche cool for a few minutes before slicing.

Step 12

Garnish with chopped chives before serving. Enjoy warm or at room temperature.
