Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 0.75 cup Boiling water
  • 1 pound Ground pork
  • 4 stalks Green onions, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Soy sauce (gluten-free)
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 0.5 cup Water

Directions

Step 1

In a large bowl, whisk together the gluten-free all-purpose flour, xanthan gum, and salt.

Step 2

Gradually add the boiling water to the flour mixture while stirring with a fork or wooden spoon until a rough dough begins to form.

Step 3

Once cool enough to handle, knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let rest for 20 minutes.

Step 4

In a separate bowl, combine the ground pork, chopped green onions, minced garlic, minced ginger, gluten-free soy sauce, and sesame oil. Mix well until the ingredients are thoroughly incorporated.

Step 5

Divide the dough into two sections and roll each section into a log about 1 inch in diameter.

Step 6

Cut each log into about 12 pieces, yielding approximately 24 pieces in total.

Step 7

Roll each piece into a ball, then flatten it into a disc using your palm. Using a rolling pin, roll each disc into a thin round wrapper about 3-4 inches in diameter.

Step 8

Place about 1 tablespoon of filling in the center of each wrapper. Fold the wrapper over the filling, creating a half-moon shape, and pleat the edges to seal the potsticker thoroughly.

Step 9

Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.

Step 10

Add the potstickers in batches, seam side up, and cook until the bottoms are golden brown, about 2-3 minutes.

Step 11

Carefully add ¼ cup of water to the skillet, cover immediately, and let the potstickers steam for 5-7 minutes until the water has evaporated and the pork is cooked through.

Step 12

Remove the lid and let the potstickers cook for another minute to re-crisp the bottoms.

Step 13

Repeat with the remaining potstickers, adding more oil as needed.

Step 14

Serve the potstickers hot with your favorite gluten-free dipping sauce.
