Ingredients

  • 2 cups Gluten-free rolled oats
  • 1 cup Natural peanut butter (creamy or chunky)
  • 1 cup Honey
  • 1 cup Gluten-free flour blend
  • 1 teaspoon Baking soda
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 1 cup Dark chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, combine the gluten-free rolled oats and gluten-free flour blend, stirring well until evenly mixed.

Step 3

In a medium microwave-safe bowl, combine the peanut butter and honey. Microwave for about 30-45 seconds to make it easier to mix, then stir until smooth.

Step 4

Pour the peanut butter and honey mixture into the large bowl with the oats and flour. Add the vanilla extract, baking soda, and salt. Stir the mixture until all ingredients are thoroughly combined and a thick dough forms.

Step 5

Fold in the dark chocolate chips until evenly distributed throughout the dough.

Step 6

Transfer the dough into the prepared baking pan, pressing it down with a spatula or your hands into an even layer.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden and the center is set.

Step 8

Remove from the oven and allow the bars to cool completely in the pan before cutting. This step ensures the bars will hold their shape when sliced.

Step 9

Once cooled, cut into 16 squares and enjoy your gluten-free peanut butter bars!
