Ingredients

  • 12 ounces Gluten-free spaghetti
  • 1 tablespoon Olive oil
  • 4 ounces Pancetta, diced
  • 2 cloves Garlic, minced
  • 3 large Eggs
  • 1 cup Parmesan cheese, grated

  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Step 2

In a large pan, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes.

Add the minced garlic to the pancetta and cook for an additional 1 minute, until fragrant. Remove the pan from heat.
