  • 4 slices Gluten-free bacon
  • 2 tablespoons Unsalted butter

  • 2 stalks Celery stalks, diced
  • 2 cloves Garlic cloves, minced
  • 3 tablespoons Gluten-free all-purpose flour
  • 2 cups Clam juice
  • 2 medium Red potatoes, peeled and diced
  • 1 leaf Bay leaf
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Heavy cream
  • 2 cans (6.5 ounces each) Canned clams, drained and rinsed
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, cook the bacon slices over medium heat until crispy. Remove the bacon, drain on paper towels, and crumble when cool. Reserve about 1 tablespoon of bacon drippings in the pot.

Step 2

Add the butter to the pot with the reserved drippings and melt over medium heat. Add the chopped onion and diced celery. Sauté for about 5 minutes until the vegetables are tender and the onion is translucent.

Add the minced garlic to the pot and saut,é for another 1-2 minutes until fragrant.
