  • 1 large Celery Stalk, chopped
  • 3 Garlic Cloves, minced
  • 2 tablespoons Tomato Paste
  • 1 cup Dry White Wine
  • 4 cups Seafood Stock
  • 1 Bay Leaf
  • 1 cup Heavy Cream
  • 1 tablespoon Gluten-Free Cornstarch
  • 1 tablespoon Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly Ground Black Pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Chopped Fresh Parsley

Directions

Step 1

Begin by boiling the lobsters. In a large pot, bring about 6 quarts of water to a boil. Add the lobsters headfirst and cover the pot. Cook for about 8 minutes, until they turn bright red. Remove the lobsters and set them aside to cool.

Step 2

Once cool, crack the lobsters and remove the meat from the claws, tail, and knuckles. Chop the meat into bite-sized chunks and refrigerate. Save the shells separately.

Step 3

In a large, heavy-bottomed pot, melt the butter with olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 8-10 minutes.

Step 4

Stir in the tomato paste and cook for 2 minutes. Add the lobster shells, white wine, seafood stock, and bay leaf. Bring to a boil, then reduce the heat to low and let it simmer uncovered for 45 minutes to 1 hour, allowing the flavors to develop.

Step 5

Remove the pot from heat and strain the bisque into another large pot using a fine mesh strainer, pressing on the solids to extract as much liquid as possible. Discard the solids.

Step 6

Return the bisque to a gentle simmer. Whisk together cornstarch and water in a small bowl to form a slurry. Stir the slurry into the bisque to thicken it slightly, simmering for about 5 more minutes.

Step 7

Stir in the cream and season with salt, pepper, and paprika. Add in the reserved lobster meat and simmer just until heated through, about 3-5 minutes.

Step 8

Serve hot, garnished with fresh parsley.
