Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with cooking spray or line it with parchment paper.
In a medium bowl, combine 1.5 cups of gluten-free all-purpose flour and 0.5 cup of powdered sugar. Add 0.75 cup of melted butter and 0.25 teaspoon of salt, then stir until the mixture is crumbly.
Press the flour and butter mixture into the bottom of the prepared pan, spreading evenly to form the crust.
Bake the crust in the preheated oven for 15-18 minutes, or until the edges are lightly golden.
While the crust is baking, prepare the lemon filling. In a large mixing bowl, whisk together 1.5 cups of granulated sugar and four eggs until well combined.
Add 1 tablespoon of lemon zest and 0.75 cup of freshly squeezed lemon juice to the egg mixture, whisking until smooth.
In a separate small bowl, combine 0.25 cup of gluten-free all-purpose flour and 0.5 teaspoon of baking powder. Gradually whisk this mixture into the lemon filling until no lumps remain.
Once the crust is done baking, pour the lemon filling over the hot crust.
Return the pan to the oven and bake for 18-20 minutes, or until the lemon filling is set and the edges are firm.
Remove from the oven and let the lemon bars cool completely in the pan on a wire rack.
Once cool, dust the top generously with 2 tablespoons of powdered sugar.
Cut into 16 squares and serve. Store leftover bars in an airtight container in the refrigerator.
