Ingredients

  • 180 grams Gluten-free all-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 100 grams Unsalted butter
  • 150 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 pieces Large eggs
  • 120 ml Buttermilk
  • 30 grams Unsalted butter (melted for icing)
  • 30 grams Cocoa powder
  • 200 grams Powdered sugar
  • 100 ml Boiling water
  • 200 grams Desiccated coconut

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a square 20x20 cm (8x8 inch) cake pan with parchment paper.

Step 2

In a medium bowl, sift together the gluten-free flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the butter and granulated sugar together until pale and fluffy, about 3 minutes.

Add the vanilla extract and mix in the eggs one at a time, beating well after each addition.

Alternately add the dry ingredient mixture and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
