Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1.5 teaspoons Xanthan gum
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 cup Granulated sugar
  • 0.5 teaspoon Salt
  • 0.75 cup Whole milk
  • 4 tablespoons Unsalted butter
  • 2 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 3 cups Oil for frying
  • 0.5 cup Jam of choice
  • 0.5 cup Extra granulated sugar for coating

Directions

Step 1

In a large mixing bowl, whisk together the gluten-free all-purpose flour, xanthan gum, baking powder, baking soda, granulated sugar, and salt.

Step 2

In a small saucepan, warm the milk and butter over low heat until the butter is melted. Allow to cool slightly.

Step 3

In a separate bowl, whisk together the eggs and vanilla extract.

Step 4

Pour the milk and butter mixture into the dry ingredients, followed by the egg mixture. Stir until a smooth dough forms.

Turn the dough onto a lightly floured surface and knead gently until smooth.
