Ingredients

  • 6 cups Mixed salad greens
  • 1.5 cups Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 0.5 cup Black olives
  • 0.25 cup Pepperoncini peppers
  • 0.25 cup Parmesan cheese
  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the mixed salad greens thoroughly and place them in a large salad bowl.

Step 2

Cut the cherry tomatoes in half and add them to the salad bowl.

Peel the cucumber, slice it in half lengthwise, scrape out the seeds with a spoon, then slice the cucumber into half moons and add to the bowl.
