Ingredients

  • 12 pieces Gluten-free corn tortillas
  • 1 pound Ground beef (85% lean)
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Canned diced tomatoes
  • 1 cup Shredded cheddar cheese
  • 2 cups Shredded lettuce
  • 1 cup Chopped tomatoes
  • 0.5 cup Sour cream
  • 0.25 cup Chopped cilantro

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and sauté until soft and translucent, about 4-5 minutes.

Step 3

Add the minced garlic to the skillet and cook for an additional 1 minute.

Step 4

Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a spatula, until browned and fully cooked, about 7-8 minutes. Drain any excess fat if necessary.

Step 5

Stir in the chili powder, cumin, salt, and black pepper, mixing well to coat the beef.

Step 6

Add the canned diced tomatoes (with their juice) to the beef mixture, stirring to combine. Let simmer for about 5 minutes until slightly thickened.

Step 7

While the beef mixture is simmering, warm the gluten-free corn tortillas in a separate ungreased skillet over medium heat for 30 seconds per side or until pliable.

Step 8

To assemble the tacos, place a scoop of the beef mixture onto each tortilla. Top with shredded cheddar cheese, shredded lettuce, chopped tomatoes, a dollop of sour cream, and a sprinkle of chopped cilantro.

Step 9

Serve immediately and enjoy your delicious gluten-free tacos!
