Ingredients

  • 250 grams Gluten-free all-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 150 grams Brown sugar
  • 100 grams Butter, melted
  • 1 teaspoon Vanilla extract
  • 120 ml Milk
  • 100 grams Raisins
  • 100 grams Dried apricots, chopped
  • 50 grams Chopped nuts (e.g., almonds, walnuts)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a standard loaf tin with parchment paper.

Step 2

In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In a separate bowl, beat the eggs and brown sugar together until well combined. Add the melted butter and vanilla extract, and continue to whisk until smooth.
