Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum (if not included in flour mix)
  • 1 third cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Ground nutmeg
  • 0.75 cups Whole milk
  • 0.25 cups Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 4 cups Vegetable oil, for frying
  • 1 cup Powdered sugar, for dusting

Directions

Step 1

In a large mixing bowl, whisk together the gluten-free all-purpose flour, xanthan gum, granulated sugar, baking powder, salt, and ground nutmeg until well combined.

Step 2

In a separate bowl, whisk together the whole milk, melted butter, vanilla extract, and eggs until smooth.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring with a spatula or wooden spoon until a smooth dough forms. The dough should be slightly sticky but manageable.

Step 4

Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes to make it easier to handle.

Step 5

After chilling, turn the dough onto a lightly floured surface and roll it out to about 1/2-inch thickness.

Step 6

Use a doughnut cutter or two round cookie cutters of different sizes to cut out doughnut shapes. Re-roll any scraps once to cut additional doughnuts.

Step 7

In a large, heavy-bottomed pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature.

Step 8

Carefully place a few doughnuts in the hot oil, being careful not to overcrowd the pot. Fry each side for about 1-2 minutes, or until golden brown.

Step 9

Use a slotted spoon to remove the doughnuts from the oil and place them on a wire rack lined with paper towels to drain off excess oil.

Step 10

Repeat the frying process with the remaining doughnuts and doughnut holes.

Step 11

Once the doughnuts are slightly cooled, dust them generously with powdered sugar before serving.
