Ingredients

  • 500 grams Cod fillets
  • 300 grams Potatoes
  • 100 grams Gluten-free breadcrumbs
  • 1 large Egg
  • 2 tablespoons Fresh parsley, chopped
  • 2 stalks Green onions, finely chopped
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil

Directions

Step 1

Peel and dice the potatoes. Boil them in a pot of salted water for about 15 minutes or until tender. Drain and set aside to cool.

Step 2

While the potatoes are boiling, place the cod fillets in a shallow pan, just covered with water. Bring to a gentle simmer and poach the fish for about 5-7 minutes or until just cooked through. Remove from water, flake, and set aside.

Step 3

In a large mixing bowl, mash the cooled potatoes with a fork. Add the flaked cod, gluten-free breadcrumbs, beaten egg, chopped parsley, green onions, lemon zest, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

Shape the mixture into 8 even-sized patties, about 1 cm thick. If the mixture is too sticky, you can wet your hands slightly with water to make shaping easier.
