  • 150 grams Butter, unsalted and at room temperature
  • 150 grams Caster sugar
  • 3 Large eggs
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Whole milk
  • 100 grams Butter for frosting, at room temperature
  • 200 grams Icing sugar, sifted
  • 1 teaspoon Vanilla extract for frosting
  • 1 pinch Tiny pinch of salt
  • 2 tablespoons Decorative sprinkles (optional)

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a 12-hole fairy cake or muffin tin with paper cases.

In a large bowl, sift together the gluten-free flour, baking powder, and xanthan gum. Set aside.

In a separate bowl, cream the butter and caster sugar together using an electric hand mixer until the mixture is light and fluffy, about 3 to 4 minutes.
