Ingredients

  • 4 pieces large eggs
  • 4 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon chopped fresh chives
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 8 slices gluten-free bread
  • 2 tablespoons butter or dairy-free spread
  • 4 pieces lettuce leaves
  • 4 slices sliced tomatoes

Directions

Step 1

Place the eggs in a medium-sized pot and cover with cold water by an inch.

Step 2

Bring the water to a boil over medium heat, then reduce the heat to a simmer. Cook the eggs for 8-10 minutes.

Step 3

Once cooked, transfer the eggs to a bowl of ice water and let them sit for 5 minutes to cool. Peel the eggs once cooled.

Chop the peeled eggs coarsely and place them in a mixing bowl.
