Ingredients

  • 2 slices gluten-free bread
  • 1 piece large egg
  • 1 slice cheddar cheese
  • 2 tablespoons butter
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 tablespoon mayonnaise
  • 4 pieces spinach leaves

Directions

Step 1

Begin by spreading 1/2 tablespoon of butter over one side of each slice of gluten-free bread.

Step 2

Heat a non-stick skillet over medium heat. Place the buttered side of one slice of bread down in the skillet.

Step 3

Top the bread with a slice of cheddar cheese. Allow it to melt slightly while preparing the egg.

Step 4

In a small bowl, beat the egg with a pinch of salt and pepper.

In another small pan, heat the remaining butter over medium heat. Add the beaten egg and cook for 2-3 minutes, flipping halfway, until fully set.
