Ingredients

  • 8 ounces gluten-free elbow macaroni
  • 4 tablespoons butter
  • 3 tablespoons gluten-free all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a medium saucepan, melt the butter over medium heat. Once melted, add the gluten-free all-purpose flour, stirring constantly for 1-2 minutes until the mixture is slightly golden and bubbly.

Step 3

Gradually whisk in the milk and heavy cream, ensuring no lumps remain. Continue to whisk until the mixture thickens, about 5-7 minutes.

Step 4

Reduce heat to low and slowly add the shredded sharp cheddar cheese and shredded mozzarella cheese, stirring constantly until the cheeses have fully melted and the sauce is creamy.

Step 5

Season the cheese sauce with salt, black pepper, paprika, garlic powder, and onion powder. Adjust spices to taste if necessary.

Step 6

Combine the cooked macaroni with the cheese sauce, stirring until all of the pasta is evenly coated with the sauce.

Step 7

Serve immediately, optionally garnished with a sprinkle of extra paprika for color and flavor.
