Ingredients

  • 2 pounds fresh clams
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 3 large garlic cloves
  • 2 medium celery stalks
  • 1 medium carrot
  • 4 cups gluten-free chicken broth
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • 2 medium potatoes, peeled and diced
  • 1 cup heavy cream
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tablespoons chopped parsley

Directions

Step 1

Rinse the clams in cold water, scrubbing to remove any grit. Discard any clams that are open and do not close when tapped.

Step 2

In a large pot, melt the butter over medium heat along with the olive oil.

Step 3

Chop the onion, garlic, celery, and carrot finely.

Step 4

Add the chopped onions and garlic to the pot and sauté until the onions are translucent, about 5 minutes.
