In a large mixing bowl, combine the gluten-free all-purpose flour, xanthan gum, baking powder, sugar, and salt. Mix well.
In a small saucepan, warm the milk to about 110°F. Pour the warm milk into a bowl and sprinkle the yeast over the top. Let it sit for about 5 minutes until it becomes foamy.
Melt 4 tablespoons of unsalted butter and add it to the dry ingredients. Beat in the egg and add the vanilla extract.
Slowly pour the yeast mixture into the flour mixture, stirring until a dough begins to form. It will be slightly sticky.
Turn the dough out onto a piece of parchment paper, sprinkle with a little extra gluten-free flour, and gently roll it out into a 15x9 inch rectangle.
