Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 1 bay leaf
  • 0.5 teaspoon thyme, dried
  • 0.5 teaspoon parsley, dried
  • 8 ounces gluten-free egg noodles
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Season the chicken breasts with half of the salt and pepper. Add them to the pot and cook until browned on both sides, about 5 minutes per side. Remove the chicken and set aside.

In the same pot, add carrots, celery, and onion. Cook until the vegetables start to soften, about 5 minutes.

Add garlic and cook for another 1 minute, stirring constantly.
