Ingredients

  • 120 grams Unsalted butter
  • 200 grams Brown sugar
  • 50 grams Granulated sugar
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 150 grams Gluten-free all-purpose flour
  • 0.5 teaspoons Xanthan gum
  • 1 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 100 grams White chocolate chips
  • 50 grams Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang to easily lift the blondies out after baking.

Step 2

In a small saucepan, melt the butter over medium heat until fully melted. Allow it to cool slightly.

Step 3

In a large mixing bowl, combine the cooled melted butter, brown sugar, and granulated sugar. Whisk until well combined and smooth.

Step 4

Add the eggs and vanilla extract to the sugar mixture and whisk until fully incorporated and the mixture is light and fluffy.

Step 5

In a separate bowl, whisk together the gluten-free all-purpose flour, xanthan gum, baking powder, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.

Step 7

Fold in the white chocolate chips and chopped nuts, if using, until evenly distributed throughout the batter.

Step 8

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.

Step 10

Allow the blondies to cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment paper overhang and cut into 16 squares.

Step 11

Serve and enjoy these delightful gluten-free treats!
