Ingredients

  • 5 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Gluten-free all-purpose flour
  • 2 cups Whole milk
  • 1 cup Sour cream
  • 2 cups Sharp cheddar cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 medium Onion, finely chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Chives, chopped
  • 0.5 cup Gluten-free breadcrumbs

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Peel the Russet potatoes and slice them into thin rounds, about 1/8-inch thick.

Step 3

In a large pot, melt the butter over medium heat. Add the finely chopped onion and saute until soft and translucent, about 5 minutes.

Stir in the gluten-free all-purpose flour and continue to cook for another minute, stirring constantly.

Gradually whisk in the milk, ensuring there are no lumps. Bring the mixture to a simmer and let it thicken, about 3 to 5 minutes.

Remove the pot from heat and stir in the sour cream, 1 1/2 cups of shredded cheddar cheese, 3/4 cup of grated Parmesan cheese, garlic powder, salt, and black pepper. Mix until the cheese is melted and the sauce is smooth.

Remove the foil and continue baking for another 15 to 20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
