Ingredients

  • 300 grams Gluten-free pasta (penne or fusilli)
  • 2 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 100 grams Baby spinach leaves
  • 2 tablespoons Gluten-free all-purpose flour
  • 500 milliliters Milk (or a dairy-free alternative)
  • 200 grams Cheddar cheese, grated
  • 50 grams Parmesan cheese, grated
  • 100 grams Mozzarella cheese, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to the package instructions until al dente. Drain and set aside.

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
