Ingredients

  • 1 cup Gluten-Free All-Purpose Flour
  • 1 cup Milk
  • 2 Large Eggs
  • 0.25 teaspoon Salt
  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Butter
  • 1 cup Ricotta Cheese
  • 4 ounces Cream Cheese
  • 0.25 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 Egg Yolk
  • 2 tablespoons Powdered Sugar

Directions

Step 1

In a mixing bowl, whisk together the gluten-free all-purpose flour and salt. Add the milk and eggs, and whisk until smooth. Stir in the vegetable oil.

Step 2

Cover the batter and let it rest for at least 30 minutes to allow the flour to absorb the liquid.

Step 3

In a separate bowl, combine the ricotta cheese, cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth. Set aside.

Step 4

Heat a non-stick skillet over medium heat and lightly grease with a bit of butter.

Step 5

Pour about 1/4 cup of the batter into the skillet, tilting the pan in a circular motion to evenly coat the surface.

Step 6

Cook until the blintz begins to set and the edges start to peel away from the pan, approximately 2-3 minutes. Flip and cook on the other side for another 1 minute. Remove to a plate and repeat with the remaining batter.

Step 7

Place 2 tablespoons of the cheese filling onto the center of each blintz. Fold the sides over the filling and then roll from the bottom to fully encase the filling.

Step 8

In a clean skillet, melt the remaining butter over medium heat. Add the filled blintzes seam side down and cook until golden brown on each side, approximately 2-3 minutes per side.

Step 9

Serve the blintzes warm, dusted with powdered sugar or with your favorite fruit topping.
