  • 0.5 pound Pork liver
  • 1.5 cups White rice

  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Cajun seasoning (gluten-free)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.25 cup Parsley, chopped
  • 2 stalks Green onions, chopped
  • 3 pieces Natural hog casings (gluten-free)

Directions

Step 1

Begin by rinsing the white rice thoroughly and cooking it in a pot with 3 cups of water until fully cooked and fluffy. Set aside to cool.

Step 2

Cut the pork shoulder and pork liver into small pieces.

Step 3

In a large pot, add the pork shoulder, pork liver, chopped onion, green bell pepper, and celery. Cover the mixture with water, bring to a boil, then reduce the heat and let it simmer for about 1 hour until the meat is tender.

Once cooked, remove the meat from the pot and let it cool slightly before mincing or grinding it using a meat grinder.

Reserve one cup of the cooking liquid and discard the rest.

In a large bowl, combine the ground meat mixture with cooked rice, minced garlic, Cajun seasoning, salt, black pepper, parsley, and green onions.

Once fully stuffed, poach the boudin sausages in simmering water for about 10-15 minutes to fully cook through.
