  • 4 pieces Cod or haddock fillets
  • 4 pieces Potatoes (large, such as Russet or Maris Piper)
  • 200 grams Gluten-free all-purpose flour
  • 50 grams Cornstarch
  • 1 teaspoon Baking powder
  • 2 teaspoons Salt
  • 250 ml Chilled sparkling water
  • 1500 ml Vegetable oil (for frying)
  • 4 pieces Lemon wedges
  • 0 Salt (for seasoning)
  • 0 Vinegar

Directions

Step 1

Begin by washing and peeling the potatoes. Cut them into thick strips, about 1/2 inch wide. Rinse the potato strips under cold running water to remove excess starch, then pat them dry with paper towels.

Heat the vegetable oil in a deep fryer or large deep pan to 325°F (165°C).

In the meantime, mix the gluten-free flour, cornstarch, baking powder, and salt in a large bowl. Gradually whisk in the chilled sparkling water to form a smooth batter. Be careful not to overmix.
