In a large mixing bowl, combine the gluten-free all-purpose flour, xanthan gum, granulated sugar, instant yeast, and salt. Mix well to ensure even distribution of the dry ingredients.
Warm the milk slightly (to about body temperature) and melt the butter gently in a small saucepan or microwave. Be careful not to overheat them.
In the center of the dry ingredients, make a well and pour in the warm milk, melted butter, vanilla extract, and the egg. Stir until the mixture comes together to form a dough.
If the dough is too sticky, add a little more flour, one tablespoon at a time, until it is smooth enough to be kneaded. Knead the dough gently in the bowl for about 5 minutes until it becomes elastic and smooth.
Cover the bowl with a clean kitchen towel or plastic wrap and allow the dough to rise in a warm place for about 1 hour, or until it doubles in size.
Once the dough has risen, gently deflate it and roll it out on a lightly floured surface until it is about 1 cm thick.
Cut out rounds using a 7 cm cookie cutter and place them on a baking sheet lined with parchment paper. Cover them with a cloth and let them rise for another 30 minutes. They should puff slightly.
Heat the vegetable oil in a deep pan or fryer to 180°C (350°F). Carefully fry the doughnuts, a few at a time, for about 2-3 minutes on each side, or until golden brown.
Remove the doughnuts and drain on a paper towel-lined plate to remove excess oil.
Once the doughnuts have cooled slightly, use a squeeze bottle or piping bag to fill each doughnut with your choice of fruit jam.
Dust the filled doughnuts with powdered sugar before serving. Enjoy your gluten-free Berliners!
