Ingredients

  • 12 ounces Gluten-free pasta (such as quinoa or rice pasta)
  • 2 cups Fresh basil leaves, packed
  • 0.25 cup Pine nuts
  • 2 large Garlic cloves
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.5 cup Olive oil
  • 0.25 teaspoon Freshly ground black pepper
  • 1 tablespoon Lemon juice
  • 0.25 cup Parmesan cheese, grated (for serving)

Directions

Step 1

Fill a large pot with water, add a pinch of salt, and bring to a boil.

Step 2

Add the gluten-free pasta to the boiling water and cook according to the package instructions until al dente. Generally, it takes about 8-10 minutes.

Step 3

While the pasta is cooking, prepare the pesto. In a food processor, combine the fresh basil leaves, pine nuts, and garlic cloves. Pulse until finely chopped.

Add the grated Parmesan cheese, salt, and freshly ground black pepper to the processor. Pulse to combine.

With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy.
