Ingredients

  • 2 slices Gluten-free bread
  • 4 slices Bacon
  • 2 Large eggs
  • 2 tablespoons Milk
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Butter
  • 1 slice Cheddar cheese
  • 1 tablespoon Mayonnaise
  • 1 leaf Lettuce
  • 1 slice Tomato

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

Cook bacon in the skillet until crispy, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess grease.

Step 3

In a small bowl, whisk together eggs, milk, salt, and pepper.

Step 4

In the skillet, melt the butter over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and fully set, about 5 minutes. Remove from heat.

Step 5

Toast the gluten-free bread slices in a toaster or skillet until golden brown.

Step 6

Spread mayonnaise on one side of each slice of toasted bread.

Step 7

Layer the scrambled eggs on the mayonnaise side of one slice of the bread. Place the slice of cheddar cheese over the eggs.

Step 8

Add the crispy bacon strips on top of the cheese.

Step 9

Place the leaf of lettuce and the slice of tomato over the bacon.

Step 10

Top with the second slice of bread, mayonnaise side down, to form a sandwich.

Step 11

Cut the sandwich in half and serve immediately.
